This recipe is super easy and fast!
1 lb sugar snap peas
1 T. olive oil
1-2 tsp. lemon zest (to personal taste)
a few sprigs of fresh Thyme
freshly ground salt and pepper (optional – to taste)
Remove the strings on the curved side of the peas by pinching the top of the pea and pulling the string down toward the bottom of the pea pod.
Heat olive oil over medium-low heat and add peas. Saute for 1-3 minutes until the peas become bright green, do not overcook.
Add lemon zest and strip the thyme leaves off the tough stem, stir to combine. Garnish with salt and pepper if you like.
The lemon and thyme are perfect compliments to the sweetness of the peas.
