Tatsoi has very dark green, spoon-shaped leaves in a perfect rosette.  It has a sweet, pleasant flavor. The leaves can be used in soups or salads. For soups, add the shredded leaves at the end of cooking.  The heat of the broth will cook them sufficiently.  Commonly known as Chinese spinach.
