Spinach

To wash, remove any blemished leaves, trim off the stems, and wash thoroughly in cold water. Spin dry in a salad spinner or drain well, then put into clean plastic bags very loosely wrapped with paper towel. Just add bacon bits, chopped eggs, & dressing for a quick spinach salad.

Tatsoi

Tatsoi has very dark green, spoon-shaped leaves in a perfect rosette. It has a sweet, pleasant flavor. The leaves can be used in soups or salads. For soups, add the shredded leaves at the end of cooking. The heat of the broth will cook them sufficiently.
